What I Eat in a day ((at work)) // Vegan

Hi, hey there, how ya doin?? Welcome to/back to my channel and to another video. This time I wanted to highlight what I eat in a day when I go to work. I just started going back to work since the Covid-19 shutdown and I am getting back into the swing of things. One thing is for sure, meal prepping is a must when eating a WFPB/plant based diet. About me:
I have been vegan for 2+ years and I would have considered myself as a junk food vegan. Not anymore! Now I am eating a Whole Foods plant based diet concentrating on higher carb and low fat intake. My starting size is about a US size 18 (Jan 2020).

I have done a ton of research by reading the Starch Solution, many more books/articles, and have watched numerous documentaries. All sources have indicated that this way of eating is very sustainable with various benefits. Which is why I feel so passionate about finding this information and spreading it to you.
