Vegan Salad Dressing Recipe #shorts

Carrot Ginger Dressing:
2 tbsp of chopped ginger
2 carrots roughly chopped
1 small shallot
3 tbsp agave or honey
3 tbsp rice wine vinegar
1.5 tbsp miso paste
1 tsp yuzu or lemon juice
1/3 cup of grape seed oil, avocado oil
1 tsp soy sauce

Blend all of the ingredients in a powerful blender.

Chopped Rainbow Salad:
3 bundles of kale any variety. Veins removed and chopped really well.
1 red bell, seeds removed and thinly sliced
3 scallions chopped
1/4 purple cabbage sliced thin
8 ounces cherry tomatoes cut in 1/2
1/2 cucumber sliced
1/2 cup edamame
1/2 cup cashews

Add all of the ingredients to a large bowl, mix and dress just before eating.
