⋇ Mexican Pinwheels:
• 2 tablespoons oil-free refried beans*
• 2 tablespoons pico de gallo
• 2 tablespoon guacamole
• 1-2 tablespoons fire roasted corn
• 1 flour tortilla
1. On a warm flour tortilla, individually layer in and spread out the all of the ingredients.
(UPDATED) 2. Roll up and wrap in plastic wrap. Refrigerate for 2 hours or overnight. Cut into 1/2″ pieces.
