Here is a Kala Chana (black chickpea) recipe that is made without onions, garlic or tomatoes and is delicious. I wanted to make this jain, so skipped the onion and garlic and also wanted to skip tomatoes to follow good food combining. Some people get bloating when they add fruits in their curries. Tomatoes are usually OK as they are citrus and get cooked but some avoid it.
