⇸ Filing Ingredients
1 ½ cup Cashews
½ cup Unsweetened Coconut Milk
¼ cup Melted Coconut oil
¼ cup Maple Syrup
½ cup Lime Juice
Zest of 2 Limes

⇸ Crust Ingredients
3 cups Vegan Graham Cracker
¼ cup Melted Coconut oil

⇸ How To Make
1.Soak cashews in water for 2 hours
2.Preheat the oven to 350. Place paper cup lining to the muffin baking pan
3.Prepare the crust first. Place the graham cracker and coconut oil into a blender. Blend well until it forms moist crumbs.
4.Transfer the crust to a bowl and add 1 tbsp of the graham cracker to each paper cup. Pressed down the crust with a bowl, glass jar or finger tips to remove any air pockets.
5.Then place the baking pan into the oven and bake for 7 minutes
6. In the meantime, place in a blender the cashews, coconut milk, coconut oil, lime juice, maple syrup and lime zest. Blend on high for 1-2 mins or until it forms an even thick consistency
7. Take the crust out of the oven and let it cool for a minute
8.Then pour the filling into the crust and smooth out evenly
9.Place in the baking pan in the freezer for 2 hours
10.Remove baking pan from the freezer and place the key lime mini pies into an airtight container
11. Take out 5-10 minutes before you would like to enjoy them 🙂
