This vegan chocolate mousse is an easy recipe made with only two ingredients. Chocolate and almond milk.
For the chocolate, it is best to use a dark chocolate with 55% to 65% cocoa (all good quality dark chocolates are naturally vegan).
For the milk, you can use any plant-based milk, but I find that roasted almond milk has the best flavor.
If you’re not vegan, you can also use regular milk.
When you whisk the mixture over the ice-bath, it should get lighter in color and thicker. Don’t let it become too thick, because it will be difficult to pour into the glasses and the texture won’t be the best.
However, if it becomes too thick, you can melt it by warming it and start over.
